You set up an entry in /etc/printcap similar to this:

$ cat /etc/printcap
lp|HP Deskjet on tar:\
  :lp=:sd=/var/spool/lpd/lp:\
  :rm=tar:rp=lp

tar is the server's name and lp is that server's print queue name.
