That's not really what most people would consider "a minimal set of packages".

to select and de-select which to install?
You basically have two choices: Use the server installation and install
everything you need additionally (tasksel may be useful here), or use
the desktop installation and deinstall everything you don't want
(debfoster may be useful in this case).
One other quick question: does it matter to MythTV whether I choose
Gnome or KDE?
It seems to use neither KDE nor Gnome, just Qt.
