Does anyone know offhand where KDE's Kmail stores the mail or can
guide me to the documented answer?

On this system, using maildir format, the mail is put in subdirectories
of ~/Mail

This is also the way it's setup on my Debian Sarge 3.1r1 2.6.8-2
kernel, using KDE 3.3.2 - perhaps newer versions of KDE have moved it
(defaulted) to where Gordon states: [/home/{your user name
here}/.kde/share/apps/kmail/mail] - and that path and dir's exist on
mine, but there's no /mail dir at the tail end on mine - Big Caveat; I
haven't used Kmail yet, though I've fired it up to look around at it's
settings and such
