Probably one for each ntfs file system, only one of which actually has a
MS-Windows XP system on it. The installer *should* have asked you about
boot options.

Can anybody help me understand where the two non-functioning WinXP boot
options came from (and how do I get rid of them) and why I have the
option to boot to two different Ubuntu kernels (both of which appear to
be associated with Ubuntu 5.10).

Probably because Ubuntu installed two different kernels. I don't know
why it did that, unless you did some sort of 'update' after your initial
install and it found a (slightly) newer kernel for you. Proper package
managers always *install* new kernels, never *upgrade* them. This is in
case the new kernel has a problem with your system -- in which case you
can reboot with the older kernel and have a working system where you can
figure out what it wrong, instead of being dead in the water.

I'm going to assume you are using the Grub bootloader. Its
configuration file is usually in '/boot/grub/grub.conf' -- this is a
plain text file you can edit.
