Is there anything special I need to do in order to create a
bootable Knoppix or Ubuntu live disk on a USB flash drive?
Or is it as simple as copying the files off the CD?

Not quite. Here's Krellan's howto using syslinux:

Here's mine using grub:

http://www.beezmo.com/FloobyDust.htm see "Knoppix on USB Flash"
link in left frame.

Lots of others have done this as well, and may have other
approaches.
