I know this tends to be subjective and I dont want a flame war but can
anyone suggest the best language to learn to do this with?
I'm using Centos 4 if that's at all relevant.
thanks in advance.

QT and GTK would be the main options - I've done a couple of simple
projects with GTK and was satisfied with the results - it was not
exceedingly difficult to figure out and there is a reference page that
goes along which describes all the windowing functions.
Depending on your time/inclination you might also want to check out gambas
- it is a V-Basick similar app.
FWIW I used to do scientific software support and development for DOD on
Unix/Linux. We used X/Motif with several custom libraries for creating and
manipulating windows and proprietary data formats. This can work very
well, but takes some time to develop the libraries.
