You have volume adjustment. It's the '0' and '9' keys.
If I run a video DVD (mplayer /dev/dvd), I get a video screen
with no controls (no sound either!).
You have plenty of controls. They're on the keyboard.
If I run streaming audio from the web, it works fine, but
again, it is a command line terminal with no adjustments.
There are tons of adjustments. RTFMP:
man mplayer
Is there suppose to be a gui interface for this thing?

What am I missing?
The ability to read the man page and search for "gui"?
Try mplayer -gui
