I set up SAMBA on the LInux machine and the MAC (running the very
latest OSX) can copy files to the SAMBA share at lightning speeds.
When I try and copy files from the LInux machine to the Mac they take
an eternity.
At one of my workplaces (mac based) I've set up a linux (Slackware) server
running nfs. It runs like a dream. File transfers are quick, and of course
lots of the time we're just writing directly to the server. The macs have
no problems with it.
There are however, a few specific settings for the exports that you have
to play with, and it's a good idea to have the same user id on both
machines.
