One thing you COULD do is ban wireless altogether, and use
some 2.4Ghz jammer to enforce it.

Be careful. If any of your jamming leaks out of the building
and affects anybody, you could be in trouble with the FCC if
somebody complained to them.

You need it would seem a 2.4Ghz scanner, that would pick up an
access point.

Any recent laptop comes with one, and you can buy a USB Wifi
interface for $15 if you shop around. Why not just open up a
laptop and do a scan for open or unauthorized access points?
