Indeed pretty safe- but if you value your system you will do backup
before a change like this
IOW, the question isn't "is there much chance?" (no), it's "is there any
chance?" (yes). ;)

I've done it many times without a single problem. But, I've no idea
what happens if, for example, the power goes down in the middle of a
resize operation. I imagine it's not good.

It would then depend on how long the UPS will keep the computer up and how
long gpartd takes to run on your setup.

I have never used gpartd. I have a UPS that will run my machine about 45
minutes, but I admit that is much more than I really need. Nice to have,
though when the power goes off for 15 or more minutes and I am in the middle
of something.
