When I googled the articles I could find all show me how to install it *to* a USB. But how does one use USB as the istallation medium itself? I cannot just copy the iso to a USB stick can I?
Try:
dd if=any.iso of=/dev/sdd bs=2048
while /dev/sdd is where your USB stick is inserted, and boot off of it with help of BIOS options (if your the mobo BIOS allows that, otherwise you may need to tweak that ISO image around around a bit, as have been advised in most of those docs which you read -- How to boot off LiveCD image of from a USB stick/pendrive).
Works for most Linux/Unix images; I have tested Debian, Arch, FreeBSD and Nexenta iso images. Although http://cto.homelinux.net/pub/FreeBSD/tftpboot/README.txt, is somewhat FreeBSD specific, but most of steps involved can be useful and, or usable for some Linux distributions too i.e. mounting an image and booting off it over PXE/Netboot.
