Also, what do iostat, vmstat, etc. show when the log is high? How about
top -n1 at the time of the load/slowness as well? Also, another free
-tm and ps auwx output at the time of the slowness (if it changes/gets
slower).

although I might add Tim that not too long ago I re-booted the box and
cleared the postfix queues. In about 30 minutes one client will begin
sending out their emails, and I'll do another vmstat for you.....
Does this make any difference now?
