Depends extremly on your network configuration.
In ideal configuration, you just set a new dhcp configuration and
tweak some server config files.
If you have to touch every single PC, it's much harder...
Then I recommend expecting a whole weekend, and don't forget to
collect administrator/root passwords for every machine...
I would first change all servers, and then set the clients.
And if you really have to touch every PC I suggest you set up an
dhcp server to avoid further work next time you have to change
something.
