How do you identify class ie SIP from TCP/IP packet?

I'm relatively new to this so please excuse my ignorance.

I want to use Linux to manage my bandwidth more effectively. My idea
is to use something like HTB, however I want to use tc u32 to identify
the class of traffic rather than use just ip address or port number.

So I could easily identify VoIP, Terminal Server, Printer traffic etc.

Any ideas?
