What do you mean by "more mature" ? IMHO one cannot compare Netfilter
and STUN, they are too different in their nature and purpose.
The STUN is older, and well known among client/server software developers.
But client/server software developers do not need to know about the Netfilter SIP helper, as it operates transparently to client/server software. That's why I say it cannot be compared to STUN.
