Everything's working great, and SSH does the trick
for remote admin for me. No issues. However, after it gets rebooted
once in a while (for various reasons, it just went down once or twice
for some reason that I'm still not sure of, there are absolutely no
logs anywhere about an issue), it gets into the maintenance mode on
boot, which means it hangs until someone puts in the root password.
I would think it is really important to look at the console and find
out what happened.

Sometimes people use a second computer to connect to a terminal port
of the first computer, and make it the main console. That way you can
see the consort remotely.

Sure, I understand that. My provider offers a KVP over IP option for
an extra fee. But I guess my question would be more whether it is a
good idea to prevent fsck check, or as people say on the forums it's
better to leave it. In theory, if the server doesn't go down, then it
doesn't really ever fsck anyways...

The only time fsck should prompt for a root password on boot is if there are so many errors that it thinks you should run it manually. If your server crashes (i.e., without closing files, etc.), then fixing disk errors is an especially good thing. If you're not using ext3 instead of ext2, then ext3 can help, although it won't solve everything.

As another poster mentioned, if you had another server in the same place, you could set up each machine up to be the other's console. Basically it would be a couple null modem cables, some kernel parameters, and minicom. An IP terminal (for example a "lights out" board) provides more functionality, but you can decide if you want it or not.
