Updating web servers with older Linux distros

Hi all,
On older web server running Red Hat 7.1, 7.2, or 7.3 how are these
servers updated? I've noticed several web hosts I work with use these
older distros of Red Hat, which I'm sure were the latest versions of
Red Hat when they were installed, but how do server updates take
place? Red Hat no longer makes updates for these distros, and I'd be
affraid of just running apt-get on a production web server with 80+
customer websites effected if server goes down.
