Change laucher folders in Fedora 2.

I'm running Fedora Core 2, with Gnome 2.6x and KDE 3.2.3 (alternately)
as desktop managers, and I would like to move the launchers I don't use
regularly from the main category folder into the "More <Category>
Applications". For example, I would like to move KGet, KMail, KNode, and
all other K-oses :-) from the "Internet" folder into "More Internet
Applications" folder.
While I am at it: can I change a name in a menu ? (For example, change
"The Gimp" into "Gimp File Editor".)

Is there a way to do this? Desktop and menu configuration was fairly
easy when using the Gnome 1.x. Nowadays, it's a nightmare for a person
like me, who doesn't even have a basic knowledge of perl or xml. Your
help will be greatly appreciated.
