Take a look at Arch Linux: http://www.archlinux.org/
The default recommended install is "base," which is enough to get a bare
working system booted when you're finished. The base packages include
dhcpcd, so if you connect via DHCP you're all set to start adding
packages as slowly and deliberately as you like with Arch's excellent
pacman tool. If you're on dial-up, ISDN, or need PPPOE, you'll have to
add whichever package is necessary for you to get online when you install
(everything you need is on the install ISO, just not in the base group).
