The new distro decission

Hallo,
I use Linux for a while now, started with SuSE Linux 7.0 some time ago
and now looking for a new "flavor".
So first topic is, what is the speciality of the different distros.
I narrowed it down to the following ones:
- Gentoo
- Debian
- Fedora Project
I also checked for the LSF Project; found myself not ready yet to
start my "own" distro.
I especially need it for servers (mail, web and ftp). But there must
be a reason why I leave SuSE. The main reason is package/software
management. Best example is, that I need postfix with mysql support.
So what I did before is compiling the package from source with the
disadvantage of complicated upgrading.
This is why my preferences go to gentoo at the moment. What I read
until now is the great portage system which should solve my example
problem.
But I am open to suggestions and any opinions on this topic. Anyone
another hint what to include in my considerations?
