pdf writer on RedHat (and AIX?)

Hi there,
I was looking around to find a FAQ or HowTo that explains how to
create pdf files from either plain text (and other file formats).
There are, I know, some applications, like applications in Ximian
Desktop that have a PDFWriterButton integrated, but what I need it
for is during unattended mode.
I'd prefer Open, Free (or Shareware) software.
Any hints?
