Keyboard Shortcut

I'm using Fedora C3.
Really hate using the mouse unless absolutely necessary, find keyboard
navigation and program management much faster.
Sure some programs reverses this role - but that I guess characterises some
users.
How does one create keyboard shortcuts for Gnome tasks, eg. the RedHat Icon
to get to the menu. I'm sure the Windows Start button is disabled for
political reasons, but can I assign another shortcut to it? Ctrl+Esc is an
alternative I always use on Non-Start button keyboards.
