A lot depends on the _size_ of the local network, and the amount of traffic.
I always recommend that as little as possible be running on the firewall,
although the sharing/routing/masquerading code usually is acceptable.

Using the server as a router is something for a tiny office or the home.
The only thing running on the server should be those application it is
serving.

You are posting from a search engine. Don't you think it might be an idea
to use the search function of that service? That would also tell you that
there is more than one distribution of Linux, and each distribution has it's
own set of toy tools for the windoze users to configure things. The networking
code is part of the kernel, and you could deal directly with that.
