I'm not 100% but YUM is a multi-stage operation, first checking for
update, resolve dependencies then downloads the packages to a cache, and
query the user whether to apply the updates. If the user replies no then
the downloaded updates remain in the cache. I think /var/cache/yum/
updates/ for the update cache and similar depending on the number of
repos you have.
You could copy the packages from the yum cache to somewhere or direct YUM
to update all or specific packages from only the cache.
