PV Size is 225.38GB but if you add up all the disk space its not even half of it

This has the same "discrepancy" as your results but I have no problem using all the available disk space. At one time I had it up to a bit over 95% used and it was the right number of GB used.

I have not looked into just how logical volume management works but I suspect if I did I would find the explanation for this difference.
