"man yum" is an excellent start, with attention to the localinstall option.
RedHat and its 'yum-rhn-plugin' tool is a real problem. yum-rhn-plugin is basically up2date in bad drag: it ignores most yum configuration options, overrides options of other yum repository configurations, and basically blows goats.
It is, however, possible to mirror the entire RHEL set of repositories with yum-rhn-plugn and the 'reposync' command, allowing you to keep a local download repository for exactly this kind of update. Pick one machine to be the mirror, then rip yum-rhn-plugin right out of the other systems and point them to your local mirror with normal yum configuraiton files.
